Cedar Plank Salmon with Spiced Plum Glaze (Optional)

Serves: 6

Ingredients

Salmon
1 untreated cedar plank (about 17" x 10")
1 bunch of scallions
2 1/2 lb. center cut salmon fillet with skin
Salt
Freshly ground black pepper

Spiced Plum Glaze
* 1 c. plum jam
* 4 t. Chinese five-spice powder
* 4 T. whole black peppercorns
* 4 T. pinot noir
* 1 t. salt

Preparation

Salmon
Preheat oven to 350. Lightly oil the cedar plank and heat in the middle of the oven for 15 minutes. Arrange scallion greens in one layer on plank to form a bed for the fish.

Put salmon, skin side down on scallion greens. Brush with olive oil and season well with salt and pepper. Roast in the middle of oven until just cooked through, about 35 minutes.
 
Spiced Plum Glaze
Simmer jam, five-spice powder, peppercorns wine and salt in a small saucepan, stirring until jam is melted, about 3 minutes. Pour glaze through a fine-mesh sieve into a small bowl, pressing on and discarding solid. Let cool to room temperature. Use to brush over salmon or duck.

To Serve

Spiced Plum Glaze is excellent brushed over our cedar planked salmon or served with grilled or pan seared salmon.
